Cocktail of the Month: “We Wish We Were Poolside” Watermelon Raspberry Granita
It’s hard to believe that today marks the beginning of October; the first full official month of autumn. The leaves may be falling along with the temperatures, but we’re still craving one last day where we can pretend that poolside parties are within reach. Thanks to the creative minds over at Attitude on Food for this refreshing beverage.
1 pint raspberries
½ c sugar
4 c seedless watermelon
¼ c raspberry vodka
Simmer raspberries, sugar, & ¼ c water in a small saucepan over medium heat for about 6 minutes, stirring occasionally.
Strain raspberry mixture through a fine-mesh sieve to remove seeds & cool.
Puree watermelon cubes, & strain through a fine-mesh sieve . Combine with raspberry mixture, add ¼ cup vodka—mix thoroughly.
Pour mixture in 8×8 glass or stainless steel baking dish.
Freeze until ice crystals begin forming, approximately 45 minutes. Use fork to scrape crystals to center of dish. Continue freezing, scraping periodically, until frozen.
Optional: Rim serving dish with salt. Like eating a slice of watermelon with salt!
